Midalidare is a realization of a dream grounded in the synergy between humanity and nature. The heart of Midalidare beats with hard work, endurance, respect, and an unwavering passion for winemaking. Spanning 160 hectares of carefully managed vineyards, Midalidare's philosophy is rooted in the diversity of wine varieties planted across the hilly terrain, each catered to its unique requirements.
The unique climate and soil conditions in Mogilovo, characterized by significant temperature amplitudes, contribute to the distinct terroir of the region. The altitude, mild winters, warm summers, and specific soil compositions create an optimal environment for grape cultivation. The lands of Mogilovo village, with diverse soils like cinnamon forest soils, alluvial soils, limestone, sandy and clay rows, form the foundation for the remarkable variety of wines produced at Midalidare.
No compromises are made in the pursuit of quality. Midalidare carefully selects and cultivates grape varieties that thrive in the given conditions and terroir. Red varieties include Cabernet Sauvignon, Cabernet Franc, Syrah, Malbec, Merlot, Pinot Noir, Mourvedre, Petit Verdot, and Pinot Meunier. White varieties encompass Chardonnay, Sauvignon Blanc, Pinot Gris, Riesling, Traminer, Semillon, and Viognier. The vineyards, such as the certified organic Dabovets, Karaliets, Shipkata, and Prisovete, each contribute to the diverse and exceptional range of wines.
Midalidare's commitment to quality extends to its winemaking practices, with a winery featuring an underground section dedicated to traditional sparkling winemaking. The emphasis on minimal light exposure during processes like secondary fermentation, aging on lees, remuage, and disgorgement underscores the dedication to producing high-quality sparkling wines. Visitors to the winery can embark on an underground tour, learning about traditional sparkling winemaking and culminating in a dome screenings room where they can savor the sparkling wines born from Midalidare's commitment to excellence.
Midalidare has expanded its winemaking horizons to the enchanting landscapes of New Zealand, driven by a desire for something different and challenging. The winery's team, well-acquainted with the region's terroir and winemaking specifics, found similarities between Mogilovo and certain parts of New Zealand, particularly in Marlborough. The decision to venture into New Zealand was not only motivated by the exceptional quality and innovation in winemaking but also by the opportunity to contribute to the international recognition of both Midalidare and Bulgarian wine.
Choosing Sauvignon Blanc and Pinot Noir from Marlborough and Central Otago, respectively, Midalidare embarked on meticulous planning and preparation for their New Zealand project. Leasing vineyards in prime areas and adopting a minimal intervention approach in viticulture, the winemaking is a synergy of New Zealand practices and Midalidare's philosophy. Waihopai Valley and Craiglochart Vineyard in Marlborough stand out as the home of Midalidare New Zealand Marlborough Sauvignon Blanc, boasting a unique microclimate, volcanic soils, and optimal temperature amplitudes.
The resulting Sauvignon Blanc showcases lime zest, blackcurrant, and seabreeze aromas, balanced by citrus and passion fruit flavors, offering a delightful textural crunch and a long, satisfying finish. While the Midalidare New Zealand project is still in its infancy, the winery remains steadfast, focused, and consistent in fulfilling their dream, embracing challenges with open arms.
